There is no aroma like it. Someone's baking bread, and the allure of hot rising dough, the caramelization of sugars in the crust, the pure warmth of that sense is as old and as much a expression of community or home as most of us know. It is wound up with the anticipation of a slowly torn crust, a cascade of crumbs, the steam from those tiny pockets of air inside the bread, and then the butter and lifting the bread to the mouth and - enough ! That bread is an internationally acknowledged symbol of welcome to a stranger, the center-piece of religious celebrations, the staff and stuff of life itself, is evidence enough of the mystery and the magic of the master baker.
